Recipe: Coconut Macaroons (GAPS Legal)

I was watching a show awhile back on making coconut macaroons. They used 1 cup of sugar PLUS sweetened coconut!! I just couldn't believe it! That is so much sugar! I just don't see why you need all that sugar when it's so unnecessary and horrible for your health. So believe me, to have an amazing Coconut Macaroon, sugar is the last thing you need!




Now this recipe is so very simple that it's a recipe I keep handy at all times! You never know when you might need it, and IT IS, no doubt, a crowd pleaser! Moist center and your choice of adding my favorite Smooth & Creamy Chocolate Recipe or just eating it plain, either way, they are soooooooo good!





Coconut Macaroons

3 Cups Unsweetened Shredded Coconut
3 tbs Coconut Flour
1/4 Cup Coconut Oil
1/4 Cup Apple Sauce (creamy)
1/2 Cup Raw Honey
1 tsp Vanilla Extract (DIY)
4 Egg Whites

Combine egg whites, honey, apple sauce, coconut oil and vanilla extract and mix gently. Do not froth or fluff mixture or the eggs will lose their binding ability. Then mix in coconut flour, and combine everything with the shredded coconut. Use your hands or whatever handy dandy tool you have to form coconut balls and place on a cookie sheet with a Artisan Silicone baking mat (if possible) cuz these babies like to stick!! Bake at 350' for 20 to 30 minutes or until they are golden brown.  Makes approximately 1 1/2 dozen depending on the size of your coconut balls!
